How to Make Your Own Raw Curry Powder
Homemade Curry Powder for Vegetable Dishes
Many Sri Lankan recipes and most of the recipes on my website include some variation of curry powder. In general, there are two different kinds of curry powder. Not long ago I posted Grandma’s recipe for homemade curry powder that we use for meat dishes. Today I’m sharing the other kind of curry powder, the one that you can use for vegetable curry and other vegetarian dishes.
100 g coriander seeds
1 1/2 tbs mustard seeds
1 tbs fenugreek seeds
10 inches (about 3 leaves) of pandan leaves
2 inches of cinnamon
7 cloves of cardamom
1 tbs white rice
1 tbs desiccated coconut
12 branches of curry leaves
1. Clean and wash all the ingredients and let them dry in the sun until everything is completely dry.
2. Cut pandam leaves (rampe) into small pieces, slightly less than half an inch per piece.
3. Grind all the ingredients into a fine powder.
This homemade curry powder is sure to add an unforgettable taste to all your vegetable dishes!
